Higher-carbon steel for a longer lasting edge.

Japanese AUS-10 steel has higher carbon than German steel, so you can sharpen less often and cut more easily.

Questions?

How long will this knife stay sharp?

It really depends on how often you use the knife, and what items you’re cutting. When tested in the rigors of a professional kitchen, the Misen knife outperformed brands that cost 30-50% more. However, no knife — including Misen’s — will stay sharp forever. When the blade starts to dull, we’ll have our expert sharpeners bring it back to its original glory for you, starting at $11/knife.

Does this knife require special care?

Misen high-end knives are extremely easy to care for. Avoid the dishwasher, wash and dry after use, and you’ll never have an issue with your knife.

What are your blades made from?

We craft our Chef’s Knife with premium Japanese AUS-10 high-carbon stainless steel for two main reasons. First, it’s a steel that offers an excellent balance between toughness, durability, and razor sharpness. Second, it has 2x the carbon content of some other “premium” brands, which helps the edge stay noticeably sharper for a longer time.

How can your knife be as good as other high-end knives if it costs so much less?

Most knives cost so much because of traditional retail markups and other fees. You’d be shocked to know how little many well-known “premium” knives actually cost to make. By partnering closely with our factories and selling directly to you online, we’re able to offer an incredible knife at wholesale pricing with absolutely zero markups. Better materials, lower price.

Does it make sense to buy one knife, and not a set?

The single most important tool in your kitchen is the chef’s knife — it’s the workhorse you reach for most often. Investing in one great knife now will change your cooking for life. We actually designed our chef’s knife to replace entire knife sets; with a 15º blade angle and hybrid Japanese/German design, this knife can do 99% of your kitchen cutting.

But if you’re interested in a set, we offer 3- and 5-piece sets including our other knives — including Paring, Serrated, Santoku, and Utility — in addition to the Chef’s Knife.

How does your warranty and trial work?

We’re 100% confident you’ll love your Misen knife. Confident enough to give you a 60-day in-home trial. If for any reason you’re not satisfied, just send it back for a full refund. All Misen knives come with a lifetime warranty against defects. We will replace any defective knives.

    Great little knife

This is the best and sharpest paring knife in my drawer. I can't say sharpest because I have a few other Misen knives in there. It handles nicely and makes prepping quite easy. Be sure to get blade protectors to keep the knife and your hands safe.

Great price on a great little knife.

Good weight and sharp blade. This replaced 4 cheap knives I had acquired, and it will last me a lifetime. I use it almost every day, and, for sure, use it every time I cook.

Why the White 3.5" Paring Knife Delivers Precise Prep

A paring knife earns its keep on the small, precise jobs a chef's knife is too big for: hulling strawberries, deveining shrimp, peeling an apple in one ribbon, or trimming garlic. This 3.5" blade is made from AUS-10 Japanese steel, which holds an edge longer than typical German steel thanks to its higher carbon content, so the sharpness you get out of the box lasts through months of everyday prep. The sloped bolster keeps your fingers settled into a natural pinch grip and away from the edge, which matters most on a knife you'll be using close to your hand.

If you're building out a full lineup, this paring knife pairs naturally with the 10" serrated knife for bread and delicate produce, or you can start with the 2-piece knife set to get your essentials covered at once. Prefer a rust-proof steel instead of AUS-10? The ACUTO440 version of this paring knife is worth a look.

Care is simple: hand wash, dry immediately, and skip the dishwasher, which can dull the edge and degrade the handle over time. Plan on sharpening every four to six months depending on use, and the knife will keep performing like new.
